The concentrated water left is the flavored content of the coffee beans. Then the green decaffeinated beans are soaked in this solution to absorb the flavor molecules. This is a 100% chemical-free process.
The antioxidants in coffee are called 'polyphenols'. It also contains flavonoids, proanthocyanidins, stilbenes, lignins, cinnamic acids, coumarins, lignans, and benzoic acids. It has a high level of chlorogenic and caffeic acids, which are considered to be strong compounds. For many people, it can be the only source of these nutrients. Another compound like quinine, increases the body's response to insulin, thus, helping diabetics. It also has a high amount of minerals, like tocopherols and magnesium, which aid in glucose metabolism. Trigonelline, another compound, which attributes to the ever popular whiff of fragrance and the bitter taste, also has antibacterial properties, which prevent dental cavities. The good news is that by roasting the beans from which this drink is prepared, one can increase its antioxidant activity. So, if you want to do so, roast your beans for a longer period of time.
