The history of this brand goes back to early 19th century. Initially, the name of the company was Giuseppe Molinari. It was changed to Ditta Fratelli Molinari when they opened their own coffee house in Rome. The place became a meeting point for several intellectual people. The Molinari family then set up a coffee roasting center, after which there was no looking back. Today their coffee is known not only in Italy, but across the world.
In order to achieve the perfect French roast, green beans have to undergo various transition phases. In the initial phases, the beans turn light yellow, giving off a grassy smell which dissipates their internal water content. After a while, the beans give off a fragrant steam and a distinct crackling sound. The first crack usually occurs when the internal temperature of the beans reaches around 180C - 205C. As most of the water in the beans has dissipated by now, the sugars present in them start to caramelize.
The typical coffee roasting process provides the rich dark brown color and characteristic flavor to coffee beans. It transforms the original green-colored beans into brown-colored ones. The composition of both, the raw and the roasted beans is the same, with the only difference being in their tastes.
